Chicken Creole

Ingredients
3 lb skinless chicken in pieces1 chopped onion1 rib of celery - chopped2 Jalapeno - chopped1 Habanero pepper - chopped3 C. Salt free stewed/diced tomatoes4 cloves of chopped garlicCreole season salt (2 tsp)1 pkg of sliced mushrooms (about 2 cups)3 cups of brown rice (uncooked)
Directions
Brown chicken and onion in skillet.

Place chicken and veggies (everything but mushrooms) in slow cooker, add tomatoes and seasoning and cover with mushrooms. Add a little water in needed. When there are about 3 hours left of cooking time you can stir in the rice or cook it separate.

Turn slow cooker on low for 8-12 hours or high 5-6 hours.

Makes 8 1 cup servings.
