1 1/2 cups whole wheat couscous1/2 c apricot preserves3 tbs olive oil2 tbs white wine vinegar2 scallions chopped 1/4 cup chopped almonds
cook the couscous. in the meantime whisk together warmed preserved with the oil and vinegar with salt and pepper. toss with cooked couscous with vinaigrette the almond and scallions
