Thai Pork Roll Ups

4 boneless pork loins, pan fried in cooking spray and sliced into thin strips. 3 cups of shredded napa cabbage2 cups shredded carrots1 yellow bell pepper cut into 24 thin strips1 bunch of cilantro, chopped.Thai Peanut SauceRice paper wrappers (check the asian food aisle)Hoisin Sauce
fill a shallow dish with one inch of hot water
combine peppers, cabbage and carrot and toss with peanut sauce.
put one rice paper wrapper into the dish and let soak for 20-30 seconds (not too much or it will tear easily)
unroll on a work space and assemble with a tbsp of cilantro, 4-5 strips of pork, and a handful of veggies.
carefully tuck the ends in and roll the contents in the wrapper, and place seam side down on a plate or in a container.
Repeat Process until ingredients are finished.
Keep chilled until ready to serve.
Serve with Hoisin Sauce for dipping.
