YUMMY EASY LOW FAT COTTAGE CHEESE BREAD

Ingredients
Yeast, bakers, 1 ounce Cottage Cheese, 1% Milkfat, 1 cup (not packed) Granulated Sugar, 5 tsp (remove) salt, 1/2 tsp. baking soda, 1/4 tsp. Onions, raw, 2 tbsp minced (remove) Butter, unsalted, 1 tbsp (remove) Fresh herbs, minced (rosemary, dill, thyme,) Egg, fresh, 1 large (remove) *Flour, white, 2.5 cup (remove)
Directions
Bloom yeast in 1/4 C. lukewarm water; heat cottage cheese to room temp, add sugar, salt, soda, herbs, onion, and egg. Add to yeast, then slowly add flour.

If you have a mixer, use the dough hook and mix on low for eight minutes; if you don't, you'll need to beat the mixture until it is smooth and elastic.

Place dough in a non-stick or sprayed bread pan, cover and let raise until double (about an hour)

Place in preheated 350 oven and bake for 35 minutes, until golden brown and sound hollow when you thump it.

Optional: Brush olive on top and exposed sides, and sprinkle with a little salt...this will soften the crust.
