Ingredients
Yellow Peppers (bell peppers), 1 pepper, large ,choppedGreen Peppers (bell peppers), 1 large, choppedRed Pepper (bell pepper)1 large, choppedCelery, raw, 4 stalk, medium (7-1/2" - 8" long) choppedRed Onions, raw, .5 cup, choppedBeans, pinto, 1 can drainedBlack-eyed peas 1 can drainedBeans, white, 1 can drained*Green Giant - White Shoe Peg Corn 2 small cans*smart balance oil, 1 cupCider Vinegar, .5 cup*Splenda, 1/4 c. jalepano (optional) 1 pepper
Directions
chop all vegetables, place in bowl. drain all cans of beans, add to chopped vegetables. Set aside

place oil, apple cider vinegar and Splenda into medium saucepan, bring to boil. When this mixture has reached the boiling point pour over vegetable and bean mixture. Place in refrigerator for minimum of eight hours.
