Enchilada Chicken

Ingredients
Red Pepper dicedOnions (1) medium dicedGarlic, 2 cloves crushedOlive Oil, 2 tbsp La Victoria Enchilada Sauce, 2 cup Diced Green Chilies 1 small canRoasting Chicken, light meat, 2 cup, chopped or dicedCheddar Cheese, 4 oz shreddedSour Cream, 1 cup Chopped Romaine LettuceChopped TomatoChopped Green OnionsSliced Black Olives
Directions
Cook onion in hot olive oil for 3-5 minutes. Add garlic and red peppers. Cook approx. 5 minutes. Add enchilada sauces and green chilies with spices. Turn off heat and add sour cream and shredded cheese. Add chicken. Gently heat. Serve over shredded lettuce. Garnish with chopped tomato, green onion, olives and additional sour cream. Count extra carbs for garnish and lettuce.
