Amber's Mini Quiche

Ingredients
1 cup extra lean ham, dices1 cup milk9 eggs3 oz part skim mozzarella1.5 oz freshly grated parmasean1 cup chopped red pepper.5 cup minced onion**whatever other veggies you would like to add
Directions
Mix all ingredients
Pour into muffin tins (filling 2/3 of the way full)
Bake in over at 350 for 25 mins

**be sure to use a non-stick muffin pan or lightly spray with olive oil.

Serving Size: 20 muffin size quiches (I have two for breakfast)
