1.5 cups brown rice, uncooked1 can black beans1 can corn, or 1.5 cups frozen corn3 tomatoes1 bell peppercilantro, about 1/2-3/4 of a bunchdressing:3T lime juice3T balsamic vinegar1T cumindash of saltdash of peppersugar to taste (optional)
Cook rice according to package directions. Chop tomatoes, bell pepper and cilantro. Combine rice, beans, corn, pepper, tomato and cilantro in serving bowl. Dissolve cumin in lime juice, then add balsamic vinegar, salt, pepper and sugar if desired. Pour dressing over salad and mix well. Serve either hot or cold. Makes 10 1-cup servings.
