Chicken and Cucumber Dill Salad

Ingredients
2 cups peeled, seeded, and diced cucumber.5 cup peeled diced celery1.5 cups cooked wild rice1 cup shredded chicken2 scallions, chopped2 tablespoons dill, chopped5 tablespoons of (.25 cup lemon juice, .25 cup olive oil, 1 tsp diced garlic)2 tablespoons toasted slivered almonds, rough-choppedsalt and pepper to taste
Directions
Put cucumber and celery in a bowl. Sprinkle with salt and pepper. Allow to sit for 5 minutes. Add rice, chicken, scallions, dill, and lemon dressing. Stir together. Add almonds, fold in.

Serve immediately or allow to "mesh" overnight in the fridge.
