4 Tilapia filets (or any white fish)1 package (10 oz) Frozen Chopped Spinach, thawed1 can low sodium black beans1 can Hunts Diced Tomatoes - No salt added4 oz part skim mozzarella2 tsp Italian Seasoning
Preheat oven to 400 degrees
Line roll pan with aluminum foil and spray lightly with cooking spray.
Spread spinach, tomatoes, and black beans. Sprinkle with Italian seasoning. Top with fish filets.
Bake for 30 minutes, then top with cheese. Bake for another 5-10 minutes until cheese is melted and starting to brown.
