Vegan Gluten free Pumpkin Spice cookies

3/4 cup mashed cooked Pumpkin (not pie filling)1/4 cup Coconut Oil1 tsp Vanilla Extract1 cup Quinoa Flour (or other combination of Gluten free flours)1/2 cup whole oats1/2 tsp Baking Soda1/2 cup Raisins1/2 cup Organic Sucanat1/2 cup Xylitol (or sugar equivalent to 1 cup for both)1/2 tsp Cinnamon, ground1 tsp mixed spice1/2 tbsp ground Flaxseed
Preheat oven to 350 degrees.
Combine dry ingredients in one bowl and mix well. Combine wet ingredients (pumpkin, oil and vanilla extract). Combine the two and mix until just incoperated. Drop by the heaping tablespoon full onto parchment lined baking sheets and bake for 16-18 minutes
