Chocolate Pumpkin Coconut Pudding

Ingredients
1/2 cup canned pumpkin1/2 cup canned coconut milk, "separated"1/4 cup unsweetened cocoa powder3/8 cup brown sugar1 tsp vanilla extract
Directions
Before preparing, chill can of coconut milk in the fridge, which will cause the fat to solidify.

Take 1/2 cup of the coconut, solid and liquid, separating. Whip solids with hand mixer until you have medium to stiff peaks.

Blend cocoa, coconut liquid, pumpkin, sugar, and vanilla with a rubber spatula until smooth.

Fold in whipped coconut until a smooth pudding consistency. Chill before serving
