V8 Fiesta Rice

Ingredients
2 tbs olive oil1 clove garlic1/2 medium onion1 green bell pepper1 cup white rice3 1/2 cups V8 juice
Directions
Saute veggies in olive oil. Brown rice in frying pan with veggies then add V8 juice. Bring to boiling, then cover and simmer 20 minutes or until rice is tender and most of the juice is absorbed.
