Banana Bread or Muffins without nuts

Ingredients
1.75 C flour2/3C sugar1t baking powder0.5t saltdash baking soda (0.25t)1/2C butter1-2 mashed over-ripe bananas (see tip)2 eggs slightly beaten
Directions
-Preheat oven to 350 degrees
-grease and flour 9"x5" loaf pan or muffin pan. Alternatively, muffin/cupcake cups ease cleaning
-In a large bowl, fork mix flour, sugar, baking powder, salt and soda
-cut in butter until mixture resembles coarse crumbs
-with fork, mix in banana(s) and eggs until blended
-spread batter evenly in pan
-Cook 45-55 minutes in loaf pan, or until toothpick comes out clean
-If using muffin tin, cooking time will be 17-25 minutes. Cook until toothpick comes out clean and tops are slightly browned


Serving Size: makes 1 loaf; 12 large muffins; 18 medium muffins or 36 mini-muffins
