CHOCOLATE CHIA PUDDING

Ingredients
1 cup raw cashews2 3/4 cups water2 tablspoons cocoa powder 1 teaspoos steviapinch of sea salt1/4 cup of chia seeds
Directions
1 soak cashews in bowl for 2-3 hours
2 drain coaked cashews, add to blender with water. blend until smooth @ 2 minutes.
3 add stevia, salt, and cocoa powder to blender, blend well. Taste. If more sweetener needed, add a bit more.
4 pour cashew milk into a medium size container, add chia seeds and stir well. Place in fridge overnight, shaking from time to time.
5 will keep in fridge for 5 - 7 days.
Serve with fresh berries.

    Perhaps I didn't let it soak long enough, or my blender isn't high powered enough. The taste is fine the the texture and appearance are quite unappealing to me. Perhaps with industrial cashew milk this would be more appealing. - 2/12/15
