Green Eggs & Bacon

Ingredients
3 large eggs1 TB Oscar Meyer bacon pieces1 TB lo-fat cream cheeseolive oil spray.2 cups ( a little less than .25 cup ) diced onions1 cup packed fresh spinach ( or frozen )garlic powder to tastedash of apple cider vinegarS & P
Directions
Lightly spray your nonstick frying pan with olive oil.
Saute your onions for 2 minutes. Add your spinach and garlic powder, vinegar and S & P. Saute till spinach is just wilted ( or thawed if you used the frozen version ) for just about 2-3 more minutes.
The vinegar keeps everything moist & keeps you from using more oil.
Now add your 3 eggs, cream cheese and bacon pieces. Toss lightly till just done ...about 2 minutes more.

This serves 2.
