Citrus Chicken Salad

Ingredients
30 oz chicken breast (skinless, boneless)roasted or grilled1 cup red peppers, sliced1 cup red onions, sliced1/2 cup carrot, grated3 heads bib lettuce 3 oz lemon juice4 tbsp extra virgin olive oil Salt and pepper to taste10 tbsp fresh cilantro, lightly chopped
Directions
Roast chicken and chill.
Slice all vegetables except lettuce and add to large bowl and mix together well.
Slice chicken and add to vegetables and mix well.
Mix together lemon juice, olive oil, salt pepper, and cilantro in small food processor or with a wisk.
Dress the vegetables and chicken mixture with the dressing and mix well.
Chill for several hours to let flavors come together.
Serve with chilled bib lettuce slices and roll chicken salad in lettuce or chop up lettuce and place a serving of chicken salad on top.
