Crispy Ginger Cookies

Ingredients
1/2 cup Butter (non-hydrogenated)1 cup splenda1/4 cup molasses1 tsp. vanilla1 cup Oat flour or Sorghum flour3/4 cup tapioca starch (flour)1/4 cup potato starch (flour)1/2 tsp. guar gum1/2 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon2 tsp. ginger, ground1/4 tsp. gloves, ground1/4 cup cane sugar or granulated sugar (reserve)
Directions
Preheat oven to 350 degrees. Cream together the butter and splenda. add the vanilla and molasses and mix well. In a separate bowl combine the flours, starch, gum, baking soda, salt and spices. sift the dry ingredients into the wet and blend until combined. Place the reserve sugar in a small bowl. Form dough into 1 inch balls and roll in sugar and place onto non stick cookie sheet. Using a fork make a criss cross pattern in cookie. Bake at 350 degrees for 15 minutes.
