Black Bean Brownies

Ingredients
1 16oz can black beans (rinsed and drained)3 large eggs1/4 c. unsweetened cocoa powder1/2 c. stevia/sugar blend (or amount equal to 1c sugar sweetness)1 tsp instant coffee granules2tsp vanilla extract (or try 1 tsp almond extract)3 TBSP melted extra virgin coconut oil (or other oil of choice--this gives it great flavor)1 tsp baking powder (optional--makes a more cake-like brownie)Options: Top with 1/2 c chocolate chips, nuts or coconut before baking
Directions
Preheat oven to 350 F
1. rinse and drain black beans, add to blender with just enough water so they will blend properly(aprox 1/4c). Blend on high until very smooth
2. add eggs, blend until incorporated
3. combine, cocoa powder, stevia blend, instant coffee, vanilla, melted coconut oil and baking powder if using and blend until very smooth.

Pour mixture into brownie pan sprayed with cooking spray to ensure they don't stick.

Bake at 350 for 30-40 minutes or until brownies are just set in middle.

Cool completely for best flavor and texture--cut into 16 squares. Store in the refrigerator.
