Skinny Minestrone with Ground Chicken

2 tsp olive oil3/4 cup chopped spanish onion1/2 cup diced celery450 grams ground chicken2 cloves garlic, minced1 28oz can diced tomatoes, undrained3 cups of low sodium Vegetable Cocktail1 cup each chopped carrots, zucchini and cabbage1 can red kidney beans, drained and rinsed1/4 cup tubetti pasta3 tbsp parsley1 bay leaf2 tsp dried basil1 tsp oregano1/2 tsp each thyme and black pepper
Heat Olive Oil in large pot over medium heat. Add onions, celery and garlic. Add chicken, brown then drain. Return to pot and add remaining ingredients. Bring to a boil, then reduce heat to medium low and simmer partially uncovered for 30 minutes.
