Banana Oat Muffins

1/2 cup all purpose flour3/4 cup whole wheat flour1/2 cup ground flaxseed1 cup rolled oats1/4 cup brown sugar2 tsp baking powder1 tsp baking soda1/2 tsp salt1 rounded tsp cinnamon1/2 tsp nutmeg1 egg1 egg white3/4 cup 1% milk1/4 cup maple syrup1 tsp vanilla3 ripe mashed bananas
Preheat the oven to 375 degrees and coat muffin tins with cooking spray.
Mix the dry ingredients (flour through nutmeg) in a large bowl.
Mix the egg through vanilla in a separate bowl. Stir the mashed bananas into the wet ingredients.
Pour the wet ingredients into the dry ingredients and stir just until blended.
Divide the batter between 15 muffins and bake for 17-20 minutes, until a toothpick inserted into the muffin comes out clean.
