Quinoa and sweet potato patties

Ingredients

1/2 cup cooked, mashed sweet potato (leftover is great)1 cup cooked quinoa2 T Smart balance buttery spread3 large egg whites (beaten slightly)1 oz finely crumbled feta cheese* salt to taste
Mash sweet potato, Smart Balance and feta cheese until well blended.
Add 1 cup of cooked quinoa, cooled
Mix in 3 beaten egg whites.
*Salt can be added if wanted
Scoop with a 1/4 cup measure into a nonstick skillet sprayed with nonstick spray and flatten slightly with spatula. Brown on both sides.
Serving Size: Makes about 8 3-inch patties
