Pork Sweet - Sour

2 tbsp soy sauce1 can of pineapple slices or chunks3 tbsp of pineapple juice (from can)2 tsp olive oil1 tbsp brown sugar1 cup bean sprouts1 tsp corn starch1 lbs pork tenderloinsalt and pepper5 cooked cups of brown rice
Mix together the soy sauce, pineapple juice, 1 tsp of olive oil, brown sugar, a pinch of salt and a pinch of pepper to make a marinade. Cut the pork tenderloin into cubes and let it soak in the marinade for about 10 minutes. Cut the pineapple slices into cubes (unless you bought the chunks :o) ).
Now take the meat out of the marinade and fry in portions in a pan using the second tsp of oil or cooking spray. Then mix the 1 tsp of corn starch into the marinade and add to the meat in the pan. Cook for 3 minutes then add the bean sprouts and the pineapple pieces. Spice to taste with salt and pepper and serve over brown rice.
Serving Size: the recipe is for 5 portions. 1 cup of rice is included.
