Chicken Meatloaf with Brown Rice & Yogurt

Ingredients
Chicken Breast, no skin, 32 ounces Egg, fresh, 2 large*Brown Rice, medium grain, 2 cup Onions, raw, 1 cup, choppedChobani 2% Plain Greek Yogurt (4 oz)2 Tbs Oregano1 Tbs Tamari2 Tbs BasilLemon Zest from 1 lemon2 t. Salt Pepper to taste
Directions
Put into 2 loaf pans and bake for 1 hour at 375 until meat probe indicates that chicken is cooked. Eat with or without natural ketchup.

    YUM. I am a dyed-in-the-wool meat eater and I still think this meatloaf is terrific. The yogurt keeps it moist despite the favorable nutritional profile. At last! I can enjoy a slice of meatloaf and not feel guilty! - 10/1/12
