Shrimp Ceviche

1 pound medium-small shrimp, peeled2 Tbsp salt3/4 cup lime juice3/4 cup lemon juice1 cup finely chopped red onion1 serrano chile, ribs & seeds removed, minced1 cup chopped cilantro1 cucumber, chopped, peeled, seeds removed1 avocado chopped, peeled, seed removed
In a large pot, bring 4 quarts salted water to a boil. Add shrimp and cook for 1-2 minutes max. Remove shrimp and place in bowl of ice water to stop cooking.
Drain the shrimp. Cut into halves. Place in glass or ceramic bowl. Mix in lime and lemon juice. Cover and refrigerate for 1/2 hour.
Mix in the chopped red onion and serrano chile. Refrigerate for additional 1/2 hour.
Right before serving, add cilantro and avocado.
