Baking Potato Oven-Fries

3 tbsp peanut oil1/2 tsp sea salt1 tsp fresh ground black pepper1/2 tsp paprika3 large baking potatoes
Makes 4 servings
Place the oven rack in the middle position. Preheat to 450 degrees. Line a large baking sheet with parchment paper. Combine peanut oil, sea salt, pepper and paprika in a large bowl. Cut each potato in half lengthwise (leaving the skin on). Cut each half potato into 6 wedges. Place the potatoes in the bowl and toss to coat well. Arrange the wedges in a single layer on the baking sheet. Bake in the oven for 20 - 25 minutes until tender. Turn the over to broil and cook until the potatoes are crispy on top (about 4 - 5 minutes). Serve immediately.

Didn't have Peanut Oil and used xtra virgin olive oil instead. Also used regular salt instead of sea salt and it was still awesome! I loved these more than I enjoy french fries FRIED. they remind me of smiley french fries.. only seasoned and yummier! Will make these over and over again. - 12/17/09
