Baking Potato Oven-Fries

Ingredients
3 tbsp peanut oil1/2 tsp sea salt1 tsp fresh ground black pepper1/2 tsp paprika3 large baking potatoes
Directions
Makes 4 servings

Place the oven rack in the middle position. Preheat to 450 degrees. Line a large baking sheet with parchment paper. Combine peanut oil, sea salt, pepper and paprika in a large bowl. Cut each potato in half lengthwise (leaving the skin on). Cut each half potato into 6 wedges. Place the potatoes in the bowl and toss to coat well. Arrange the wedges in a single layer on the baking sheet. Bake in the oven for 20 - 25 minutes until tender. Turn the over to broil and cook until the potatoes are crispy on top (about 4 - 5 minutes). Serve immediately.

    Didn't have Peanut Oil and used xtra virgin olive oil instead. Also used regular salt instead of sea salt and it was still awesome! I loved these more than I enjoy french fries FRIED. they remind me of smiley french fries.. only seasoned and yummier! Will make these over and over again. - 12/17/09

    These came out fantastic! We made them tonight with the laughing cow chicken cordon bleu. We don't necessarily like our fries crispy, so we skipped the broiling, and left them in the oven for a total of 25 minutes. Came out great! Thanks for the awesome recipe. - 1/28/10
