Pork and Green Chile Stew

Ingredients
1 lb boneless pork loin roast, lean, fat trimmed2 Tbsp flour 1 medium onion, diced 2 cans (4.25oz) diced green chilies2 Tbsp chopped jalapeno, or more to taste
 1 (10oz) can Rotel diced tomatoes and green chilies1/2 cup low sodium chicken broth 1 Tbsp cumin 1/2 tsp garlic powder
 Salt & pepper, to taste

Directions
1. Cut pork into 2" pieces. Season lightly with salt and pepper.

2. Heat a large skillet over medium-high heat and brown the pork on all sides, about 3 - 4 minutes total. Sprinkle 1 Tbsp of flour over pork and stir to cook 30 seconds, sprinkle remaining flour over pork and cook an additional 30 seconds.

3. Add browned pork to the slow cooker along with the remaining ingredients.

4. Cook on LOW 8 hours.

    Made this without the flour-did 2 cans of tomatoes with chiles and 1 4 oz can of green chiles, came out a bit spicier than I expected but very tasty! - 9/7/16
