Buffalo Stuffed Chicken Breasts

Ingredients
1/4 cup fat free cheddar cheese, shredded 1/4 cup reduced fat blue cheese crumbles1/3 cup celery stalk, minced 1/4 cup green onion, minced 1/4 cup carrot, minced salt & pepper, to taste 1 1/2 lb boneless, skinless chicken breasts, pounded to 1/4" thickness 6 Tbsp bread crumbs1 Tbsp fat free Greek yogurt 3 Tbsp Franks hot sauce1 Tbsp lemon juice cooking spray
Directions
1. Preheat the oven to 400 degrees. Lightly spray a baking dish with cooking spray and set aside.

2. In a small bowl, combine cheddar, blue cheese, celery, green onion, carrot and salt & pepper and mix.

3. Distribute the cheese mixture evenly between the chicken breasts, spreading down the center. Tightly wrap and place seam side down.

4. Place the bread crumbs in one bowl and set aside. In another bowl, combine the hot sauce, lemon juice and yogurt and mix well.

5. Roll chicken breasts in the lemon juice mixture, then into bread crumbs and place seam side down on the prepared pan. Lightly spray the top of the chicken with cooking spray.

6. Bake 30 - 35 minutes or until cooked through.
