1 medium Yukon Gold Potato1.5 tbsp of Extra Virgin Olive Oil1 tsp. Kosher Salt
Wash potato and slice very thin (between 1/16-1/8"). One medium potato makes approximately 48 chips. Place potato in a bowl with extra virgin olive oil and completely coat potatoes. On a paper plate sprinkle kosher salt on plate then add chips all around and sprinkle additional salt on top. MICROWAVE UNCOVERED on high for 2 to 2-1/2 minutes. Watch carefully after 2 minutes (depending on oven). They will turn brown and crisp.
