Broccoli Quinoa cheese casserole

3/4 cup quinoa, rinsed4 cups water1/2 tsp salt1 cup milk2 TBSP cornstarch1/4 cup chopped onion1/4 cup chopped celery1 TBSP olive oil1 package frozen broccoli florets, cooked or 2 cups cooked fresh broccoli1/2 tsp salt 6 slices American cheese or 1/4 cup processed cheese, diced1/2 tsp black pepper
Cook quinoa 20 minutes until done, drain. Sautee veggies in oil until soft; add milk mixed with cornstarch and boullion cubes and stir over medium heat until mixture starts to thicken and boullion cubes dissolve and incorporate, remove from heat. Add cooked quinoa, broccoli and cheese and stir until cheese melts and all is mixed together, serve.
