Curry Vegetable Stew

Ingredients
Thumb-sized piece of ginger, peeled and finely chopped2 cloves garlic, finely chopped or pressed1 onion, chopped1 large sweet potato, peeled and chopped1 can garbanzo beans (14 oz), drained1 can diced tomatoes (14 oz)large container vegetable broth (28 oz)1/2 can (14.5 oz) coconut milk2 cups fresh spinach2/3 cup brown rice1 tsp curry powdersalt and pepper to taste
Directions
Combine all ingredients except spinach in a pot and simmer until sweet potatoes are tender. Stir in spinach during the last couple minutes of cooking.
