broccoli & chedar potatoe skins

*Extra Virgin Olive Oil, 1 tbsp (remove)Broccoli, fresh, 1 bunch (remove)Chicken Broth, .5 cup (8 fl oz) (remove)Cheddar or Colby Cheese, Low Fat, 1 cup, shredded (remove)Baked Potato (baked potatoes), 4 potato (2-1/3" x 4-3/4") (remove)
bake potatoes until tender 40-60 min. remove and let cool. Once cool, prepare the broccoli until tender 3-5min. Remove brocolli from water. Cut potato in half lengthwise and scoop the insides out into a bowl with the broccoli leaving a thin layer of flesh still in potatoe. Do not pierce the skin of the potato. Add chicken stock and 1/2 cup of cheese to the broccoli potato mixture and mash eerything together. Season the filling and scoop the filling back into the hollowed out potato shells dividing it evenly. sprinkle rest of cheese over potatoes and place back into oven to melt cheese. 1-2 min
