Broccoli Stalk Soup

Ingredients
200g broccoli stalks, sliced50g carrot, sliced1 small onion, chopped1 stalk of celery, sliced1 tsp olive oilsalt, pepper, thyme for seasoning1 tsp red wine vinegarjuice of 1/2 lemonwater
Directions
1. Saute broccoli strips on one side in half the oil. Remove once once side is brown and let dry on a paper towel.

2. Meanwhile sweat onion, carrot, and celery in the remaining oil in a separate sauce pan. Sprinkle with salt and pepper. Deglaze the pan with vinegar.

3. Add broccoli to the other vegetables and cover in about 1 1/2 cups water. Season with some thyme. Bring to a simmer and cover lightly. Cook about 10-15 minutes.

4. Remove from heat and let cool slightly.

5. Puree with a food processor or blender until silky smooth.

6. Return to saucepan over lowest heat and add enough water, if necessary, to achieve the desired consistency. Squeeze in the juice of half a lemon and blend. Season as desired.
