Chick'n (Chicken) Cordon Bleu - Vegetarian Style!

Ingredients

1 cup panko bread crumbs1/4 C flour4 sprigs fresh thyme, leaves onlySaltPepper1 garlic clove, finely minced2 T butter or Earth Balance, melted4 Gardein Chick'n Scallopini4 slices LightLife vegetarian ham1/2 C gruyere cheese or non-dairy cheese (Swiss flavored), shredded
Preheat oven to 350 degrees.
Very carefully, slice chick'n cutlet in half (across the flat side). Again, be careful! You will need a sharp knife and patience.
Cut or tear vegetarian ham slice to match the cutlet shape. Place on top of bottom half of cutlet.
Sprinkle cheese or cheese substitute on top of ham. Top with other half of the cutlet.
Place in fridge while preparing breading.
Mix together flour, salt and pepper.
Mix in all other breading ingredients (panko, thyme, garlic, melted butter).
Beat two eggs in separate bowl.
Coat cutlet in egg.
Coat egg-covered cutlet with breading mixture.
Place in greased baking pan.
Bake for approximately 30 minutes or until browned.
Remove from oven and enjoy!
