Pisco Sour

Ingredients
3 oz Pisco (Peruvian recommended)Juice from 1 Lime, Key Lime if available (aprox 1 oz)1 oz Simple Syrup1 Egg WhiteIce 2 or 3 Dashes of Angostura Bitters
Directions
Add Pisco, Lime juice, Simple Syrup, and Egg White to shaker.
Fill with Ice and shake vigorously.
Strain in to an old-fashioned glass
Add a couple of dashes of Bitters to top of foam

(The egg white will create a foam or froth when shaken. If made properly there should be about 1/2 inch of froth on the top.)

Serving Size: Makes 1 6-oz drink
