Tofu and Hummus Breakfast Burrito

Ingredients
1 block firm tofu - diced1 tub of hummus - any flavorSalsaHash browns or diced potatoesOnionCheddar Cheese - shreddedWhole Wheat Tortillas
Directions
1. Dice up the tofu and potatoes and fry in Extra Virgin Olive Oil until lightly browned on the outside and cooked all the way through.
2. Dice up the onion
3. Warm up the tortillas. Spread a little of the hummus on the tortillas, sprinkle on a little bit of the cheese. Add a small serving size of both the potatoes and tofu. Top with onion and salsa. Roll up into a burrito and enjoy!
