Ingredients
5lb Chicken Breast (optional) 1 Can Black Beans (drained & rinsed) 1 Bag Frozen Corn 1 Can mushrooms (drained & rinsed) 1 Can or frozen carrots (drained & rinsed) 1 Box Barilla Wheat Penne Pasta 2 Tbsp Tofutti Cream Cheese 1 Cup Silk Plain Soymilk 1/4 Cup Lime Juice 2 Tbsp Cilantro 3 Tbsp Chili powder 1 Clove Garlic 3 Tbsp Paprika 5 or 6 Slices Rice Vegan Cheddar Cheese (didn't have shreds) 1 Tbsp Minced Onion (optional) 1 Tbsp BBQ sauce 1 Tbsp Chipotles in Adobo Sauce 1 Can Rotel
Directions
Cook pasta according to box. Drain pasta and return to pan. Add all ingredients, slowly adding Silk, Cream Cheese, and Rice Slices throughout while stirring. Keep stirring non-dairy milk ingredients until pasta is juicy and creamy.
