Chicken a l'Orange

Ingredients
8 shallots2 T olive oil1/2 t kosher salt and pepper12 oz tyson chicken breast1/2 c mandarian orange in light syrup2 T smuckers sf orange spread1 T white wine vinegar1 T rosemary, chopped
Directions
Heat oven to 425 degrees. In a shallow roasting pan toss shallots with 1 T of the oil and 1/2 of the salt and pepper. Cut the chicken breast in strips. In a food processor mix the remaining oil, mandarian oranges, wine vinegar, orange spread and rosemary, pulse until well mixed and pulpy. Pour over chicken in a large bowl and toss until well coated. Add to roasting pan, placing among the shallots and pour remaining marinade over all. Bake until chicken is brown and shallots are tender, approximately 25-30 minutes.
