2 16 oz. jars of salsa (Your choice as to level of heat. I also use a low sodium variety, so the sodium amount is based on that brand.)1 lb. of ground turkey or lean ground beef (can be made vegetarian by skipping the meat)1 10 oz. can of Rotel diced tomatoes and peppers1 large can of chili beans1 small can of yellow corn/peppers (optional)1 pack of taco seasoning powder1/2 cup of chopped onions1/2 cup of chopped green/yellow/or red bell peppersred pepper flakes (to taste)Top with:2 tablespoons of reduced or non-fat sour cream0.25 cup of reduced or non-fat shredded cheddar or Mexican cheese1 ounce of corn chips (optional)jalapeno peppers
Brown the ground turkey or ground beef in a large pot with the onions and peppers and drain. Add the remaining ingredients and stir well. Heat until bubbling. Top with suggested toppings as desired. Enjoy!
