Wheatberry Salad

Ingredients
1 cup dried wheatberries2 chopped scallions3 stalks celery, chopped1 tbs olive oilJuice of 1 lemon1 tbs balsamic vinegarSalt & pepper to taste1/4 cup chopped roasted almonds1/4 cup chopped roasted pecans1/4 cup dried cranberries, chopped1/4 cup dried apricots, chopped
Directions
Toast wheatberries for ~ 4 minutes, then add ~ 2.5 cups water and bring to a boil. When boiling, add generous pinch of salt.
Cook wheatberries for ~ 45 minutes, until chewy with some bite.
Strain wheatberries and mix with remaining ingredients.
