Salmon and Asparagus Stir Fry

Ingredients
2 teaspoons olive or canola oil1 lb salmon, fresh, no skin1 medium onion, thinly sliced3 cloves garlic, finely chopped1 teaspoon finely chopped gingerroot9 oz cut asparagus2 cups white rice8 ouce sliced fresh mushrooms1 medium tomato, cut into thin wedges2 tablespoons reduced sodium soy sauce1 tablespoon lemon juice
Directions
1. Cook white rice.

2. In 12 inch non stick skillet, heat oil over medium-high heat. Add salmon, onion, garlic, gingeroot and asparagus; cook 2-4 minutes, stirring frequently, or until fish almost flakes with fork.

3. Carefully stir mushrooms, tomato, soy sauce and lemon juice into skillet. Cook 2 to 3 minutes, stirring frequently, until heated through and fish flakes easily with fork.

4. Serve over rice. Additional low-sodium soy sauce if desired.
