Baked Pumpkin Oatmeal

�2 cups uncooked oats �1/2 cup coconut sugar or 1/3 cup honey or maple syrup �1/3 cup raisins �1/3 cup chopped walnuts (use any nut/seed desired - pecans are good) �1 scoop protein powder �1 can pumpkin �2 tablespoons milk (plus more if needed) �1 large egg, beaten �1 teaspoon vanilla �1 teaspoon cinnamon �1/2 teaspoon nutmeg �1/2 teaspoon salt �coconut oil for greasing pan
1.Preheat oven to 350�.
2.Combine the first 5 ingredients in a medium bowl. Add vanilla, cinnamon, nutmeg, and salt. Stir to mix. Add the milk, pumpkin, and egg; stir well. Pour oat mixture into an 8-inch square baking dish coated with coconut oil. Bake at 375� for 30-40 minutes. Serve warm.
