Stuffed Piquillo Peppers

Ingredients
1/2 small onion, choppped1 garlic clovepinch of red pepper flakes1 lb. chorizo3/4 c bread crumbs2 cups Manchego Cheese1/2 bunch parsley, chopped2 10oz jars Piquillo Peppers, drained & patted dry**Had to add the closets thing to a piquillo when entering recipe because there was no Piquillo -
Directions
Cook Chorizo and remove from pan, sautee onion in grease from chorizo till soft(a little olive oil may be needed), add red pepper flakes and garlic and saute 2 more minutes. Remove from heat and add bread crumbs and let cool. Add Cheese, mix and stuff into peppers. Bake 8-10 minutes.
