Hong Kong Style Steamed Salmon

4 oz Fresh Salmon filet3 cups raw baby spinach1 tbsp sliced thin scallions1 tsp grated fresh ginger root1 minced garlic clove1/4 of a lemon (juice)1 tsp sugar (or substitute)Ziplock Steamfresh bag (optional)
Prepare a pot to steam fish and spinach. I prefer to use ziplock steamfresh bags. If you use the bag just stuff in all the spinach and put the fish on top last.
Add ginger, garlic, lemon, sugar, and soy to a small sauce pot and bring to a boil over medium heat. Set aside.
Steam spinach and fish until fish is cooked through and flaky. About 5 mins. If using steamfresh bag microwave 3 mins and let sit one min.
Place salmon and spinach on a plate salmon on top and drizzle sauce mixture over the top. Sprinkle scallions over the dish. It's that easy and soooo good.
