Pumpkin Bars

4 eggs (or 1 c. Egg Beaters)2 c. granulated sugar2 c. canned pumpkin (16 oz can)1/2 c. canola oil (we prefer olive oil)1/2 c. applesauce (substitute for oil)2 c . whole wheat four2 tsp. baking powder2 tsp. ground cinnamon1 tsp. baking soda1/2 tsp. salt1/2 tsp. ground ginger1/4 tsp. ground cloves
Heat oven to 350 degrees and grease a jelly roll pan (15.5"x10.5"x1"). Beat eggs, sugar, pumpkinn, oil, and applesauce. Stir in flour, baking powder, cinnamon, backing soda, salt, ginger and cloves. Pour batter into pan and bake 25-30 minutes or until light brown; cool. We like them plain or you can frost them with a cream cheese frosting. Cut into 2"x1.5" bars. Refrigerate any remaining bars. Makes 49 bars.
