Andrea's Extra Lean and Tasty Turkey Meatloaf with Homemade BBQ sauce

*Jennie-O Extra Lean Ground Turkey, 32 oz Onions, raw, 1.5 cup, chopped Green Peppers (bell peppers), 1.5 cup, chopped Spinach, frozen, 1 cup Thyme, ground, 1.5 tbsp Garlic powder, 1 tbsp *Grey Poupon Dijon Mustard, 6 tsp *4C Breadcrumbs, Panko Plain, 1.5 cup *Egg - Eggbeaters, .5 cup Olive Oil, 2 tbspTomato Paste, 1 can (6 oz) Heinz, One Carb Reduced Sugar Tomato Ketchup, 1 Tbsp, 6 serving *Sauce - Worcestershire Sauce - Winn Dixie (1 tsp.), 6 tsp
Mix tomato paste, ketchup, and Worcestershire sause in a small pan on low heat, this is going to be your low sugar BBQ sauce.
Heat Olive Oil In a saute pan. Add onions, peppers, spinach, thyme and anything else you might want to add. When cooked down set aside to cool a little.
Add all remaining ingredients to a large bowl with cooled sauted veggies. I find it easies to just dig in and mix with your hands. When all ingredients are incorporated put on a cooking sheet that has been sprayed with a little cooking spray or rubbed with a little Canola Oil, or an oil of your choice that can take a higher heat.
Pour BBQ sauce over meatloaf but save a little bit for leftovers. Since you are working with a very lean turkey and can get a little dry when you use it for leftovers. If that happens and you have run out of BBQ you can always whip up some more or use a store brand that you like. Just be aware BBQ can be deadly if you are using a lot.
I cook mine for about an hour at 375 degrees. If you make it thicker if may require additional cooking time.
Serving Size: Makes about 10 1.5 inch thick slices (depends on how you shape your loaf though)
