Roasted Potato Soup with cream corn

Ingredients
1 cup onion chopped3 cups potatoessalt, pepper. thyme dijon mustardchicken brothcream corn3/4 cup skim milk
Directions
Sautee 1 cup onion in butter and olive oil
Add leftover grilled potatoes and stir
Sprinkle in thyme, salt, pepper to taste
Add 1 tsp. dijon mustard
Add chicken broth and bring to a boil.

Turn heat to low for 5 minutes
puree or mash potatoes
Return to pot
Add .5 milk
Add 1 can cream corn

Adjust seasonings.

Cook on low for 10 minutes

Serve
