Low Fat/Sugar-Free Pumpkin Raisin Muffins

2/3 cup dry powdered milk2 tsps. pumpkin pie spice1 tsp. cinnamon6 tsps. Splenda6 Tbsps. Flour 1 tsp. baking soda2 eggs or Egg Beater equivalent1 tsp. vanilla1 cup canned pumpkin4 Tbsp. raisins - or other dried fruit1/2 cup grated carrots - raw2 Tbsp. ground flax seed - optional
Mix dry ingredients and set aside. Beat eggs and vanilla, add pumpkin, mix, add dry ingredients and mix well. Stir in carrots and raisins. Stir in flax seed if using. Spray muffin tin with cooking spray - if using paper liners, spray those as well. Divide evenly into twelve muffins. Bake at 350 degrees for 20 - 25 minutes. Enjoy! Makes 12 muffins.
