Healthy carrot soup

Ingredients
2 Tbsp butter1.5 lbs carrots, chopped1 large onion, chopped1 stalk celery, chopped1 potato, chopped5 cups vegetable stock1/2 tsp nutmeg1 tsp dried gingerSalt and pepper to taste
Directions
Melt butter in large pot. Add celery and onion and cook till soft. Add carrots, celery, potato, stock, ginger, nutmeg, salt and pepper and bring to boil. Lower heat to simmer and simmer until carrots are soft; about 10 minutes. Blend soup with immersion blender and adjust seasoning as necessary. Let simmer for 10-20 more minutes.
