Rolled Meat Loaf

2 lbs Hamburger - lean6 slices (1 oz) Provolone Cheese6 slices (6 oz) Prosciutto1 Cup sliced Fresh Mushrooms1 Cup Onions (raw & diced)1/2 C Sun Dried Tomatoes (diced)1 large Egg - Raw1 package McCormick Meat Loaf Seasoning Mix1/4 C Olive Oil1 C Bread Crumbs, Plain
1. In a sauté pan, combine tomatoes, mushrooms, onions and olive oil. Cook on medium heat until onions are soft. Set-aside to cool.
2. While that is cooking, in a separate bowl, combine hamburger, bread crumbs, seasonings and egg. Kneed by hand until thoroughly mixed.
3. On parchment paper, roll out the hamburger mixture to approximately 1 inch thick to form a rectangle no longer than your baking dish.
4. Spread the cooked onion, mushroom and tomato mixture over hamburger.
5. Place sliced Provolone Cheese slices on top.
6. Place Prosciutto slices on top.
7. Now roll up your meat loaf starting on the long side. Roll like a jelly roll using edges of the parchment paper to help.
8. Pick it up by holding the sides of the parchment paper, then roll into baking dish. Place seamed side down. Seal the end to hold in the cheese as it melts and keep it from burning.
9. Cook at 350 degrees for approximately 1 hour or until meat thermometer reads internal temperature 160 degrees. (Time will vary based on width of the meatloaf.)
Toppings
If you want a topping on your meatloaf, ½ way through the cooking, top with condensed tomato soup. For a sweater topping, use ketchup. The picture shows a topping of cheese. Add cheese only after removing from oven. Once you remove from oven, allow to set-up for a few minutes prior to serving.
